In 2009/2010, eight durum wheat cultivars were compared in organic and conventional cropping system in two different locations of south - central Italy. A huge dataset was evaluated, including quality and agronomic traits. As expected, grain protein content revealed to be the real Achille’s heel for organic productions, seen as average values were not far from the Italian national standard for durum wheat minimum value of protein content (11.5 %). In spite of variable grain protein contents, baking quality of organic wheat was found to be acceptable to good. Mycotoxin (DON) infestation was generally low on tested grain samples. Choice of wheat cultivar was the most efficient way to obtain higher grain quality. Fertilization with readily available nitrogen and, to a lower extent, association with legumes and green manures with mixtures containing fodder legumes also improved grain quality. Reduced tillage affected soil quality and wheat yield but had little effects on grain quality. |

Der Bericht gibt Sortenbeschreibungen und Erfahrungen aus Nachbau von Emmer, Sommerweizen Kolad, Nackthafer, sowie der Weizensorte: Waltenberg und Hackenberg auf dem Hof Bollheim. Für den in diesem Bericht dargestellten Backvergleich von Weizensorten, dient die Sortendarstellung aus LE 1/02 (S. 40-42) als Grundlage. Backversuche, -verfahren, -ergebnisse, sowie Ergebnisse aus den Untersuchungen mit den bildschaffenden Methoden werden eingehend dargestellt. Insbesondere der gute Geschmack und der höhere Gehalt an dem ernährungsphysiologisch wichtigen Aleuron-Eiweiß, erklären die Präferenz der alten Sorte. |

Durch die Reduzierung der S-Einträge in landwirtschaftliche Ökosysteme infolge der notwendigen Installierung von Rauchgasentschwefelungsanlagen kommt es nicht nur bei S-bedürftigen Kulturen wie Raps sondern auch bei Weizen zu Ertragsausfällen sowie Verschlechterungen der Backqualität. Im Vergleich zum konventionellen Landbau müssen die regionalen Unterschiede von Klima und Bodenbeschaffenheit im ökologischen Landbau mehr berücksichtigt werden. Eine eigene Züchtung für diese Vielfalt der Anbaubedingungen war nicht nur notwendig, weil der Züchtungsfortschritt im konventionellen Landbau immer weniger den Bedürfnissen im ökologischen Landbau entspricht, sondern auch, weil die neueren Züchtungsmethoden – bis hin zur Gentechnik – nicht mit dessen Prinzipien vereinbar sind. Aus den geschilderten Phänomenen entsteht der Eindruck, daß die exzellenten backtechnologischen Eigenschaften der modernen Qualitäts-Weizensorten auf einem veränderten Verhältnis der Pflanze zum Schwefel beruhen. Dabei wurden polare Schwefelwirkungen beschrieben: Applikationen der Nährsubstanz Schwefel führen zu weicheren Teigen und Klebern. Dagegen kann in wärmeren Temperaturverhältnissen des Standorts ein (nichtstofflicher) Schwefel- oder Sulfurprozeß gesehen werden. Er induziert festere Proteinstrukturen. Ökologisch und konventionell angebauter Weizen aus dem kontrollierten DOK-Feldversuch (Schweiz) wurde umfassend hinsichtlich biochemischer Unterschiede charakterisiert. Dazu wurden die Profiling-Techniken Proteomics und Metabolomics, sowie Analytik von Einzelverbindungen eingesetzt. Metaboliten-Profile und Analytik von Einzelverbindungen ergaben geringfügige Unterschiede im DOK-Weizen aus unterschiedlichen Anbauvarianten. The phytochemicals including flavonoids and phenolic acids mainly contained in the outer layer of the kernels are key factors responsible for the biofunctionality of whole grains. The phytochemical profiles of twelve grain samples comprising 6 wheats, 3 barleys and 3 oats were studied for comparative evaluation of their antioxidant properties. Total phenolic content (TPC) and antioxidant activities (DPPH and ORAC) of the grain extracts were measured. The bound phenolic acids were identified and quantified using HPLC and mass spectrometry. Direct and indirect methods for determining the technological flour quality of modern wheat varieties with high gluten quality have been assessed. Direct methods like the commonly used Rapid-Mix-Test (RMT) and an optimized baking test were compared to the indirect parameters gluten and crude protein. The results for the optimized baking test in 2007 showed more than 30 % higher loaf volume (713 ml/100 g flour) compared with the RMT (544 ml/100 g flour). In this selection of varieties, the determination of wet gluten between two laboratories showed no consistency in the results. Wheat (Triticum aestivum L.) cultivars may have differential effects on soil microbial communities and the breadmaking quality of harvested grain. We compared six Canadian spring wheat cultivars under organic and conventional management systems for yield, breadmaking quality and soil phospholipid fatty acid analysis (PLFA) profile. Yields were lower, but protein levels were higher in the organic system. Cultivars differed for quality traits, but all cultivars had acceptable levels for processing.
